The Olive Oil from Domaine La Michelle : The Liquid Gold
Homer called it "liquid gold." In ancient Greece, athletes ritually rubbed it all over their body. Olive oil has been more than mere food to the peoples of the Mediterranean: it has been medicinal, magical, an endless source of fascination and wonder and the fountain of great wealth and power¹.
The Domaine La Michelle is passionate about its olives and the production of its oil. We grind our olives at the familial mill, exclusively by cold pressing of the olives. The different "crus" are all extra virgin olive oils (EVOO). To maintain their nutritional value, all the olive oils we sell are of the current vintage.
The different growths are :
- The single varietal olive oil:
- « Aglandau » : A varietal with a very green fruit flavor, spicy, bitter, with aromas of raw artichokes
- « Cayanne » : An oil with a more subtle green fruit flavor, that impresses with its smoothness and its aromas of ripe tomato and quinces
- The olive oils from the Aix-en-Provence AOC (Appellation d'Origine Contrôlée / Controlled Name of Origin) must contain at least two varietals of olives
- A.O.C. olive oil, traditionally aged
- A.O.C. olive oil, green fruit,
- A.O.C. olive oil, dark (black) fruit
All the oils from the "Domaine La Michelle" are bottled in dark green Bordeaux style bottles of 75 cl.
